it’s derby day, you know what that means

It means Derby Pie, Benedictines, ham biscuits, and some healthy stuff thrown in for balance.

    I wish I could come over for Derby Pie — had never even heard of it before!

    @Yankee, OMG it is so good and so easy to make (dangerously easy). In my research I found a lot of variation, but used Nancie McDermot’s recipe for Tar Heel Pie from her “Southern Pies” [a great book, a sequel to her “Southern Cakes” which is also good). Basically it is pecans, chocolate chips, white and brown sugar, egg, butter and vanilla. I threw in a tablespoon of KY bourbon just for the heck of it. So good.
