An Under Appreciated National Holiday

August 2nd was National Ice Cream Sandwich Day. To celebrate, I made Pastry Studio’s amazing cocoa wafers and stuffed them with vanilla ice cream. So, do you like your sandwiches open faced? or regular?

Is there some actual authority that decrees these days, or can anyone do it? I’d like to see ‘National Bellybutton Lint day’, ‘International Sheep Frightening Day’ or even… ‘Annoying Celebrity Imitation Week’!

I don’t know who creates these, but I’m happy that they do! The more the merrier, and if it gives you an excuse to make ice cream sandwiches, really, who can complain?
